Hobo Stew
Hobo Stew is as easy to make as it is delicious.
Hobo Stew is an all-in-one, oven baked dish that is easy to make and very flavorful. Try it with toasted and buttered baguette slices. We loved it from the first bite.

Ingredients
- ground beef - 1 lb
- corn - 1 can, drained
- tomatoes - 1 can, whole, peeled tomatoes, drained and chunked
- red potatoes - 3 medium, chunked with skins on
- carrots - 3 large, sliced
- onion - 1 small, chunked
- baby portobella mushrooms - 1 basket, sliced in half
- Au Jus powder - 2 Tbs
- coffee - 1/2 Cup
- garlic powder and pepper to taste
Instructions
Crumble raw hamburger evenly into 13 x 9 baking dish. Add vegetables and mushrooms, evenly spaced. Sprinkle with au jus powder, pepper and garlic powder. Pour coffee over all. Cover with foil, bake @ 375 for 1 hour or until potatoes and carrots are tender. Stir before serving.
ALTERNATE: Replace hamburger with kielbasa, add pickled peppers; replace au jus and coffee with ½ c white wine.
Hobo Stew is simple to make and simply delicious.
Hobo Stew is an easy to make oven-baked dish that is really tasty. Basically, everything goes into a 9 x 13 baking dish and gets covered with foil and baked for an hour. Butter and lightly brown some baguette slices in the broiler for the perfect accompaniment.
